Description
This hands-off slow cooker recipe is the ultimate weeknight solution for busy families. By combining tender boneless chicken breasts with zesty salsa and taco seasoning, you achieve a flavorful, high-protein meal with minimal cleanup. The final addition of creamy, softened cheese creates a luscious, velvety sauce that turns shredded chicken into the perfect base for tacos, burritos, or grain bowls. It is a reliable, healthy, and completely alcohol-free meal that requires almost no effort.
Ingredients
2 lbs boneless skinless chicken breasts
16 oz jarred salsa of choice
4 oz softened cream cheese
1 packet taco seasoning
Instructions
Place chicken breasts into the bottom of the slow cooker basin.
Pour the jarred salsa evenly over the top of the chicken pieces.
Sprinkle the taco seasoning packet across the surface of the salsa.
Cover the lid tightly and set the slow cooker to LOW heat.
Cook the mixture for 6 hours until the internal temperature reaches 165 degrees Fahrenheit.
Remove the lid carefully and add the softened cream cheese to the hot chicken.
Shred the chicken directly in the pot using two forks.
Stir the sauce and shredded meat vigorously until a creamy, uniform coating forms.
Notes
Use chicken thighs for a higher fat content and extra tenderness. For a lower sodium dinner, create your own taco seasoning blend. Store leftovers in an airtight container for up to 3 days. Pair with tortillas, rice, or fresh salad greens.
