Ingredients
1.5 lbs boneless, skinless chicken breast
3 medium zucchini, sliced into half-inch rounds
4 large heirloom tomatoes, diced with juices

1 tsp sea salt
1/2 tsp black pepper
Instructions
Chop the zucchini into half-inch rounds for even cooking.
Dice the fresh tomatoes into large chunks, keeping all the juices.
Place the chicken breasts at the bottom of the slow cooker for direct heat.
Layer the sliced zucchini and diced tomatoes over the chicken.
