These nutritious plant-based taco bowls are a perfect weeknight solution for healthy, satisfying dining. By simmering protein-rich lentils with savory taco spices and serving them over crisp romaine lettuce, you achieve a hearty texture and deep flavor profile without any meat. This simple, restaurant-quality meal is packed with fiber and sustained energy, making it an ideal choice for busy households looking for high-quality, whole ingredients.

Ingredients

Scale

1 cup dried green or brown lentils
2 tablespoons taco seasoning
1 head romaine lettuce, shredded
1 cup salsa
4 corn tortillas
3 cups vegetable broth

Instructions

Rinse the lentils under cold running water to remove any debris.
Combine rinsed lentils and vegetable broth in a medium saucepan.
Simmer over medium heat for 20 minutes until tender.
Drain any excess liquid from the saucepan.
Stir the taco seasoning into the warm lentils until evenly coated.
Shred the romaine lettuce into bite-sized pieces and divide into four bowls.
Top the lettuce with the seasoned lentil mixture.
Add a generous scoop of salsa to the center of each bowl.
Warm the corn tortillas in a dry skillet and serve alongside the bowls.

Notes

Lentils can be stored in an airtight container in the refrigerator for up to 4 days. You can customize your bowls by adding optional toppings like avocado slices, cilantro, or a dollop of Greek yogurt for extra creaminess.
