Ingredients
2 lbs boneless chicken breasts
16 oz mild or medium chunky salsa
15 oz black beans, rinsed and drained
12 oz sweet corn, frozen or canned
1 tsp ground cumin
Instructions
Place the chicken breasts at the bottom of the slow cooker insert.
Pour the jar of salsa over the chicken.
Sprinkle the cumin evenly over the top.
Cover and set the slow cooker to low heat.
Cook for six hours until the chicken is tender.
Add the drained black beans and the sweet corn during the final thirty minutes.
Remove chicken breasts to a cutting board and shred with two forks.
Return the shredded chicken to the slow cooker and stir to combine all ingredients.
Notes
You can substitute chicken breasts with chicken thighs for a moister result. Fresh corn cut off the cob can also be used if available. This dish stores well in an airtight container in the refrigerator for up to three days.
