Ingredients
2 medium zucchini (8–10 oz total)
1/2 cup grated Parmesan cheese (2 oz)
2 tbsp extra virgin olive oil
1 tsp dried oregano
1/2 tsp salt, or to taste
Instructions
Preheat oven to 425°F (220°C) with rack positioned in center.
Wash zucchini, trim ends, and slice 1/4-inch thick.
In bowl, whisk together olive oil, oregano, salt, and 3 tbsp Parmesan.
Toss zucchini slices until fully coated with the seasoned oil mixture.
Place slices 1 inch apart on parchment-lined baking sheet.
Bake for 15 minutes, flip slices, bake 10 more minutes.
Sprinkle remaining Parmesan cheese 2 minutes before end of baking time.
