2 large white peaches, freestone varieties preferred
180g (6oz) burrata (or mozzarella if unavailable)
1 tablespoon honey, preferably raw/local variety
12 fresh basil leaves
1 teaspoon extra virgin olive oil, light-flavored
1 teaspoon balsamic glaze (optional)
1 teaspoon cane sugar (for optional caramelized peaches)


Instructions

Slice peaches into ½” wedges and cut open burrata gently
Rinse and pat dry basil leaves
Arrange peaches, burrata, and basil on a serving plate in a radial pattern
Drizzle honey, olive oil, and balsamic glaze (if using) evenly over components
Optional: Lightly sprinkle 1 teaspoon sugar on peaches and broil 4 inches from heat for 30 seconds for caramelized edges
