Ingredients

16 oz lemonade concentrate
16 oz whipped topping
8 oz cream cheese, softened
1 1/2 cups graham crackers
1/4 cup sugar
1 tbsp granulated lemon peel (optional)


Instructions

Pulse graham crackers in a food processor into fine crumbs.
Mix graham cracker crumbs with sugar until sandy.
Press 3 tbsp of the crust mixture into each cup, using a measuring cup to firm.
Beat cream cheese and sugar in a bowl until smooth.
Gradually add whipped topping, mixing on low speed.
Fold in lemonade concentrate and lemon zest. Adjust sweetness if needed.
Spoon filling into crusts, filling 3/4 full.
Freeze for 4 hours until firm.
Store in a sealed container. Thaw for 15 minutes before serving.
