Ingredients

2 lbs (900g) skinless chicken breast
1 (28 oz) can fire-roasted tomatoes
8 oz (225g) full-fat cream cheese
1 cup shredded sharp cheddar cheese
2–3 fresh jalapeños, seeded and diced
3 cloves garlic, minced
1 small can (4 oz) mild green chilies


Instructions

Prep ingredients: Dice jalapeños, shred cheeses, and drain tomatoes in a colander
In a large pot, sauté garlic in olive oil for 1 minute
Add chicken breasts and cook 5–6 minutes per side
Stir in fire-roasted tomatoes and green chilies
Simmer 10 minutes while chicken finishes cooking
