Ingredients
2 lbs (900g) skinless chicken breast
1 (28 oz) can fire-roasted tomatoes
8 oz (225g) full-fat cream cheese
1 cup shredded sharp cheddar cheese
2–3 fresh jalapeños, seeded and diced
3 cloves garlic, minced
1 small can (4 oz) mild green chilies
Instructions
Prep ingredients: Dice jalapeños, shred cheeses, and drain tomatoes in a colander
In a large pot, sauté garlic in olive oil for 1 minute
Add chicken breasts and cook 5–6 minutes per side
Stir in fire-roasted tomatoes and green chilies
Simmer 10 minutes while chicken finishes cooking
Off heat, press cream cheese into mixture until fully dissolved and glossy
Add cheddar cheese gradually, stirring constantly until melted
Stir in jalapeños 2 minutes before serving
