Ingredients

2 (5-ounce each) frozen chicken breasts
3 large garlic cloves, grated
1 cup (8 oz) grated parmesan, 2 tbsp reserve for garnish
1/4 cup heavy cream or coconut milk (non-alcoholic halal option)
1 (16-oz) bag store-bought dumpling mix
4 cups low-sodium chicken broth (vegetable broth optional)
1–2 tbsp olive oil (or unsalted butter for a richer finish)


Instructions

Salt chicken breasts and refrigerate for 10 minutes
Grate garlic using a microplane for maximum yield
In a 4-quart pot, sauté garlic for 30 seconds in olive oil
Add chicken breasts and chicken broth – stir to coat completely
Poach on low for 8 minutes until chicken is no longer translucent
Shred cooked chicken with fork into bite-sized pieces
Stir parmesan into broth 2 tablespoons at a time
Simmer dumplings as instructed on package
Stir in cream and reduce for 2-3 minutes
Adjust seasoning with freshly cracked pepper
Transfer to serving bowl and top with reserved parmesan
