Description

Garlic roasted eggplant with herbs is a simple Mediterranean dish with tender roasted eggplant, olive oil, garlic, and fresh herbs.


Ingredients

Scale

2 medium eggplants sliced

3 tablespoons olive oil

4 garlic cloves minced

1 teaspoon oregano

1 tablespoon parsley

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon lemon juice


Instructions

1. Preheat oven to 400ยฐF.

2. Slice eggplant into rounds.

3. Arrange slices on a baking sheet.

4. Mix olive oil garlic oregano salt and pepper.

5. Brush mixture on eggplant slices.

6. Roast 20 minutes turning halfway.

7. Remove from oven and drizzle lemon juice.

8. Sprinkle parsley before serving.

Notes

Add feta cheese for extra flavor.

Serve with hummus or yogurt sauce.
