Ingredients
Ground Chicken 1 lb
Sweet Potatoes 2 large
Cheese 1 cup, shredded
Spinach 1 cup, fresh
Olive Oil 2 tablespoons
Garlic 2 cloves, minced
Onion 1 small, chopped
Oregano 1 teaspoon
Sea Salt and Black Pepper to taste
Instructions
Preheat oven to 400°F (200°C)
Peel and cube sweet potatoes into 1-inch pieces
Chop onion and mince garlic
Spread sweet potatoes on a baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and pepper
Toss to coat and roasting for 20 minutes
Heat remaining 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat
Add chopped onion and garlic, sauté until translucent
Add ground chicken, season with oregano, salt, and pepper, and cook until browned
Stir in cooked sweet potatoes and fresh spinach
Mix well, press the chicken mixture into the skillet, and sprinkle shredded cheese on top
Reduce oven temperature to 350°F (175°C), transfer skillet to oven, and bake for 20-25 minutes until cheese is golden and bubbly
Remove from oven, let cool to room temperature, then serve
