Ingredients
Ground Chicken
1 lb (450g), 93% lean
Zucchini
2 medium, sliced lengthwise
Garlic
3 cloves, minced
Olive Oil
2 tbsp, extra virgin
Dried Oregano
1 tsp
Salt
To taste
Black Pepper
To taste
Instructions
Wash zucchini and pat thoroughly dry
Peel and mince garlic using a press
Chop zucchini into 3/4″ spears
Season chicken with salt and pepper
Heat 1 tbsp olive oil in a 12″ skillet over medium heat
Add zucchini, sauté 4-5 minutes until softened
Push vegetables aside, add chicken to skillet
Cook chicken 6-8 minutes, breaking into small pieces
Mix zucchini and chicken
Add garlic, oregano, and remaining olive oil
Simmer 2-3 minutes until fully blended
Adjust seasoning to taste
