Ingredients
16 oz cream cheese, softened
2 lbs fresh strawberries, hulled and diced
1.5 cups graham cracker crumbs
1 cup confectioners sugar
1 tsp pure vanilla extract
Instructions
Place graham crackers in a food processor or sealed bag and crush until fine crumbs form.
Wash, dry, and remove stems from strawberries, then dice them into uniform cubes.
In a large bowl, beat the softened cream cheese, confectioners sugar, and vanilla extract until light and fluffy.
Place a generous tablespoon of graham cracker crumbs into the bottom of each serving cup to form a base.
Spoon or pipe a layer of cream cheese filling over the crust to one-third of the cup height.
Add a generous layer of diced strawberries over the cream cheese.
Repeat the layering process until the cup is nearly full, finishing with a final layer of strawberries.
Notes
Ensure cream cheese is at room temperature for a smooth, lump-free filling. These cups are best assembled fresh but can be refrigerated for up to 2 hours before serving to allow flavors to meld. If storing longer, add the graham cracker crumbs right before serving to keep them crunchy.
