Description

Tender ground chicken dumplings infused with fresh parsley and thyme simmer in a aromatic, pork-free broth. These golden-brown, hand-formed comfort food bundles are perfect for warming winter meals and highlight the natural chicken flavors with a gentle earthiness from the herbs.


Ingredients

1.5 pounds boneless chicken thighs, ground
2 tablespoons unsalted butter (olive oil substitute)
1/4 cup all-purpose flour
2/3 cup chopped flat-leaf parsley
1 tablespoon fresh thyme, plus additional for garnish
1 small onion, diced (0.25 inches)
3 garlic cloves, minced
2 celery stalks, diced
1 carrot, thinly sliced
4 cups homemade chicken or vegetable broth
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

Dice onion into 0.25-inch pieces
Mince garlic directly for the recipe
Dice celery stalks into similar pieces
Thinly slice carrot lengthwise
Combine all vegetables in a large bowl
Melt butter in a Dutch oven over medium heat
Add mirepoix mixture and sauté for 8 minutes until translucent
Remove vegetables, then separately sauté minced garlic for 1 minute
Return mirepoix to the pot and add ground chicken
Season with salt and pepper
Cook chicken 5 minutes until no longer pink
Mix chicken with flour, parsley, and thyme to form a paste
Bring broth to a simmer in the Dutch oven
Use a spoon to form teacup-sized dumplings
Drop dumplings into the broth and cook 10 minutes until golden and floating
Garnish with fresh thyme before serving

Notes

Use free-range chicken thighs for better moisture and flavor
Cast iron pot accelerates golden color formation
For vegan version, substitute butter with olive oil and use vegetable broth
Add remaining broth to dilute if taste is too concentrated during testing
