It is a fantastic, stress-free weeknight dinner solution that delivers all the comfort of the original dish without the tedious preparation of stuffing individual peppers.
Ingredients
1 lb Ground Beef (90% lean)
4 large Bell Peppers, diced
1.5 cups Long Grain Rice, rinsed
2 cups Beef Broth, low-sodium
15 oz Tomato Sauce
3 cloves Garlic, minced
1 tbsp Italian Seasoning
Instructions
Select the Sauté function on your pressure cooker to preheat the steel insert.
Add the ground beef and cook until browned, breaking it apart with a wooden spoon.
Drain any excess fat from the pot.
Stir in the minced garlic and sauté for 30 seconds until fragrant.
Deglaze the pot by pouring in the beef broth and scraping the bottom of the pot to prevent burn warnings.
Add the rinsed rice, tomato sauce, Italian seasoning, and diced bell peppers into the mixture.
Close the lid and set the valve to the Sealing position.
Cook on High Pressure for 8 minutes.
Allow a 10-minute natural pressure release before opening the lid.
Notes
Ensure you rinse the rice thoroughly to remove excess starch, which helps prevent a burn signal. You can substitute the ground beef with ground turkey if preferred. Top with shredded mozzarella or cheddar before serving for an extra melty finish.
