Description

A vibrant Mediterranean salad blending peppery arugula with zested garlic and bright lemon juice. Fresh, tangy, and effortless, this dish highlights crisp greens with a balanced, non-oily dressing.


Ingredients

Arugula, 4 cups, stemmed and washed
Garlic, 2 cloves, minced
Lemon Juice, 3 Tbsp, freshly squeezed
Olive Oil, 2 Tbsp, light or refined
Salt, 1/4 tsp (to taste)
Ground Black Pepper, 1/2 tsp (to taste)
Olive Oil, 2 Tbsp, light or refined (duplicated in original table)


Instructions

Prepare Greens: Wash arugula under cold water. Spin or pat dry
Create Garlic Base: Peel garlic cloves. Crush or mince for stronger flavor
Combine Wet Ingredients: Mix lemon juice, olive oil, salt, and pepper in a small bowl
Layer Dressing: Fold garlic into dressing until smooth
Coat Greens: Toss arugula with dressing until evenly coated, avoiding sogginess
Serve Immediately: Divide evenly. Top with optional pomegranate seeds or pumpkin seeds

Notes

Use room-temperature dressing for even coating
