Ingredients
1 lb (450g) snap peas (fresh or frozen)
2 tablespoons unsalted butter
3 cloves garlic, minced
1 large lemon (zest and juice)
½ teaspoon salt
¼ teaspoon black pepper
Instructions
Rinse and trim snap peas. Remove strings if frozen. Quarter larger pods
Heat butter in a skillet over medium heat. Sauté garlic until fragrant
Add snap peas and salt, stir continuously until tender (3-4 minutes)
Pour lemon juice, lift veggies with spatula. Cover pan for 20 seconds
Toss with lemon zest before plating
Notes
Mince garlic and zest lemons minutes before cooking for maximum flavor
Quarter larger peas for even cooking
Use cast iron or stainless steel pans for better heat distribution
