Ingredients
4 medium zucchinis (English or Italian preferred)
2 tbsp olive oil (light or extra virgin)
1 large lemon (zest and juice)
1 tbsp fresh dill
1 tbsp fresh parsley
1 tbsp fresh thyme
2 cloves garlic
1 tsp salt (adjust to taste)
Freshly ground black pepper to taste
Instructions
Slice zucchini into 1/8-inch rounds using a mandoline
Drizzle 1 tbsp of oil over zucchini slices and toss to coat evenly
Rub lemon zest into zucchini slices using gloved hands to redistribute flavor
Finely mince dill, parsley, and thyme in a bowl, then stir in remaining 1 tbsp oil, lemon juice, minced garlic, salt, and black pepper
Add zucchini slices to the herb mixture, toss gently
Cover with plastic wrap and refrigerate for 15 minutes
Preheat grill to medium-high heat (375°F-400°F)
Brush the grill rack with oil using a steel brush
Arrange zucchini slices in a single layer 4-5 inches apart on the grate
Grill undisturbed for 4-5 minutes until golden-brown and charred in spots, flip, and repeat
Transfer to a serving platter and brush with the remaining herb glaze
