Ingredients
100g dark chocolate (70% cocoa or higher, sugar-free)
50g unsalted butter or ghee
30g unsweetened dutch-processed cocoa powder
50g granulated erythritol or monk fruit sweetener
2 large egg yolks
Instructions
Preheat the oven to 175 degrees Celsius.
Line a baking sheet with parchment paper.
Melt the dark chocolate and butter together in a double boiler over medium heat until smooth.
Remove from heat and stir in the granulated sweetener.
Whisk in the egg yolks one at a time until fully incorporated.
Sift the cocoa powder into the mixture and stir until the dough is thick and uniform.
Roll the dough into small, uniform balls and place them on the prepared tray.
Bake for 12 minutes in the preheated oven.
Allow them to cool completely on the tray before serving.
Notes
Ensure the egg yolks are at room temperature to prevent the chocolate from seizing. Store in an airtight container at room temperature for up to three days.
