Description

These refreshing, bite-sized cucumber sandwiches combine creamy cheese and lean turkey for a satisfying, low-carb snack ideal for parties, lunches, or quick breakfasts with 8g of protein each.


Ingredients

1 medium cucumber
6 oz cream cheese
6 oz lean deli turkey slices
1 tbsp chopped dill
1 tsp lemon zest, optional


Instructions

Wash cucumber thoroughly
Cut into 1-inch rounds using a melon baller if preferred
Pat dry with paper towels to remove surface moisture
Using a pastry blender, soften cream cheese at room temperature
Stir in dill and lemon zest until smooth but not runny
Chill filling for 10 minutes to set texture
Place one slice of turkey over each cucumber round
Spread 1/2 tbsp cream cheese mixture evenly over turkey
Garnish with additional dill sprigs if desired

Notes

Chill cucumbers for 1-2 hours before assembling to maintain crispness
