Description

A rich, velvety Italian-infused soup blending tender chicken, slow-simmered carrots, and parmesan-creamed broth. Comforting layers of sweetness, herbs, and cream form a hug-in-a-bowl.


Ingredients

Scale

1.5 lbs boneless chicken thighs (skinless)
4 cups chicken broth
1 cup heavy cream
3 large carrots (chopped)
1 cup shredded parmesan cheese
2 tbsp extra-virgin olive oil
1 tsp thyme + rosemary
1 tsp salt
3 garlic cloves


Instructions

Heat oil in a pot. Sauté garlic and herbs until fragrant (2 mins). Deglaze with broth, reduce by third over medium heat.
Add chicken thighs, season with salt, cover and simmer 25 mins. Add carrots, simmer uncovered until tender (15 mins).
Stir in cream, return chicken, cook 10 mins. Blend 1/3 of soup for texture.
Add parmesan, cook 8 mins until tender. Serve with fresh thyme and preserved lemon (optional).

Notes

If soup is too thick, add more broth or water.
Coconut cream optional for dairy-free adaptation.
Imported block parmesan melts better than pre-grated.
