Ingredients
1 lb skinless, boneless chicken breasts
1 medium English cucumber
1.5 cups cherry tomatoes, halved
1/2 cup kalamata olives
1/4 cup red onion, finely chopped
1 cup feta cheese, crumbled
1/4 cup olive oil
Juice of 1 large lemon
1 tbsp red wine vinegar
1 tsp dried dill
Salt and black pepper to taste
Instructions
Preheat grill or skillet to medium-high heat.
Grill chicken for 5-7 minutes per side until fully cooked. Let rest and dice.
Slice cucumber into rounds or half-moons.
Combine chicken, cucumber, tomatoes, red onion, olives, and feta in a large bowl.
