Ingredients
1.5 cups finely chopped pecans
1 cup packed brown sugar
2 large eggs, room temperature
3 tablespoons butter, melted
1 teaspoon pure vanilla extract
24 frozen mini tart shells
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Arrange the mini tart shells on a large baking sheet, ensuring they are stable and upright.
In a medium bowl, whisk together the eggs, brown sugar, melted butter, and vanilla extract until smooth.
Fold the finely chopped pecans into the wet mixture until fully coated.
Spoon the pecan filling into each tart shell until they are approximately three-quarters full.
Bake for 18 to 20 minutes until the filling is puffed and set, and the edges of the pastry are golden brown.
Remove from the oven and allow to cool on the baking sheet before serving.
Notes
Ensure the tart shells are completely thawed if specified by the package instructions. Store any leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness. These transport very well for potlucks.
