Description

Mint Chocolate Chip Cheesecake Bars are a creamy dessert with cool mint flavor, mini chocolate chips, and a buttery crust. These easy cheesecake bars chill into a fresh and rich treat.


Ingredients

  •  1/2 cups chocolate cookie crumbs
  • 5 tablespoons melted butter
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon peppermint extract
  • 1/2 teaspoon vanilla extract
  • 2 drops green food coloring, optional
  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat the oven to 325°F.
  2. Mix cookie crumbs and melted butter.
  3. Press the mixture into a lined baking pan.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs, peppermint extract, and vanilla extract.
  6. Stir in food coloring and mini chocolate chips.
  7. Spread the filling over the crust.
  8. Bake for 30 to 35 minutes.
  9. Cool completely and chill before slicing.

Notes

Chill the bars before slicing for the best texture.
