A tender, velvety one-pan dish combining chicken thighs, aromatic garlic, rich cream sauce, and fresh herbs. Baked to perfection with minimal effort in under 45 minutes.
Ingredients
2 lbs chicken thighs (boneless, skinless)
4 cloves garlic (minced or pressed)
1 cup heavy cream (substitute 2% milk + oil for lower fat)
1/2 cup parmesan (freshly shaved preferred)
1 tbsp herbs (thyme/rosemary, fresh if possible)
Instructions
Melt 2 tbsp butter in oven-safe skillet over medium heat
Add chicken thighs in single layer, cook 5-6 minutes per side until golden
Transfer to heatproof dish; deglaze the pan with 3 tbsp chicken stock
Spoon onion-herb paste over chicken
Pour cream, garlic, and 1/2 the parmesan into skillet
Bring to simmer for 8 minutes, scraping pan for fond
Heap remaining parmesan on top of chicken
Bake at 400°F for 18-22 minutes until bubbling
Lift chicken thighs out for 3-minute rest before serving
Notes
Preheat oven while chicken rests in step 2
Use non-stick skillet for effortless fond scraping
Scatter fresh thyme leaves during last 5 minutes of baking
Thicker thighs (2.5 oz each) ensure juiciness
Rest chicken on wire rack to avoid sogginess
Avoid parmesan with preservatives
