1 lb boneless skinless chicken thighs, diced
12 oz rotini pasta
4 cups low-sodium chicken broth
1 cup heavy cream
4 cloves garlic, minced
1 cup freshly grated parmesan cheese
2 tbsp vegetable oil


Instructions

Heat a large heavy-bottomed pot over medium-high heat with the oil.
Add the chicken thigh pieces and brown until a golden crust forms, then remove and set aside.

Pour in the chicken broth, scraping the bottom to deglaze the pot.
Add the dry rotini pasta to the broth and simmer, stirring occasionally, until liquid reduces by half and pasta is al dente.
Return the chicken to the pot.
Reduce heat to a simmer and stir in the heavy cream and parmesan cheese.
Stir continuously until the sauce is smooth and fully thickened, then serve immediately.

Notes

Cavatappi or penne pasta serve as excellent alternatives to rotini. Ensure the chicken thighs are cut into uniform bite-sized pieces for even cooking. For extra flavor, you can garnish with fresh basil or red pepper flakes before serving.
