Ingredients
1 lb ground beef (90/10 lean)
3 large bell peppers, chopped
1 cup uncooked long-grain white rice
15 oz can tomato sauce
2 cups low-sodium beef broth
1 medium yellow onion, diced
3 garlic cloves, minced
2 tbsp Italian seasoning
Instructions
Heat a large skillet or Dutch oven over medium-high heat.
Add the ground beef to the pan and break it apart into small crumbles.
Cook the beef until browned and no pink remains, then drain excess fat.
Lower the heat to medium and add the diced onions and bell peppers.
Sauté the vegetables for about 5 minutes until softened.
Stir in the garlic and cook until fragrant.
Add the uncooked rice, tomato sauce, beef broth, and Italian seasoning to the skillet.
Bring the mixture to a gentle boil, then cover and reduce heat to low.
Simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
Remove from heat and serve warm.
Notes
Ensure the rice is fully submerged in the liquids to guarantee even cooking. You can top the final dish with shredded mozzarella or parmesan cheese for added richness if desired.
