Ingredients
4 (6oz) chicken breasts, flattened with meat mallet
1 cup shredded parmesan cheese
1 cup ¾” slices low-moisture mozzarella cheese
1 cup breadcrumbs
1 tsp garlic powder
2 tbsp olive oil
2 large whisked eggs
Instructions
Place chicken between parchment paper and pound to ¾” thickness using a meat mallet
Preheat oven to 400°F. Set up 3 bowls: whisked eggs, breadcrumb-garlic mixture, and baking sheet
Dip chicken in egg wash, then press into breadcrumb-garlic mixture
Drizzle with 1 tbsp olive oil and bake for 15 minutes until golden
Top with mozzarella slices and parmesan
Return to oven and bake 12-15 minutes until cheese bubbles and internal temperature reaches 165°F
Notes
Use room temperature eggs for better coating adhesion
Broiling final 2 minutes (watch closely) enhances golden crust
Ensure chicken thickness is uniform for even baking
