Description

A quick, vegetarian side dish of tender-crisp snap peas tossed with caramelized roasted garlic and nutty Parmesan. Ready in 25 minutes with perfect textural harmony.


Ingredients

12 oz (340g) snap peas, fresh and taut
3 cloves garlic, peeled
1/2 cup grated Parmesan cheese
2 tbsp extra virgin olive oil
1/4 tsp sea salt (adjust to taste)


Instructions

Rinse snap peas and pat dry with paper towels
Trim stem and base ends with a sharp knife
Melt olive oil in a pan at medium heat
Add garlic and sauté until golden brown (2-3 minutes)
Add snap peas to the pan in a single layer
Stir occasionally while roasting for 5 minutes
Remove garlic cloves from pan with a slotted spoon
Turn heat to high to caramelize peas slightly (2 minutes)
Quickly sprinkle Parmesan over peas and stir constantly
Remove from heat immediately when cheese begins melting
Transfer to serving dish to stop cooking
Drizzle remaining garlic oil for extra flavor

Notes

Use snow peas if unavailable
Substitute nutritional yeast for a dairy-free option
Optional finishing touch: add lemon zest or fresh parsley
