Ingredients

Mayonnaise

Dried Pimentos

Butter
4 tbsp (½ stick), softened
Vegetable Oil
1 tbsp (optional for browning)
Salt
½ tsp (adjust to taste)
Instructions
Combine shredded cheese, mayonnaise, pimentos, salt, and softened butter in a large bowl until smooth
Rest mixture in refrigerator for at least 15 minutes to firm
Toast bread slices until golden brown
Spread chilled pimento cheese mixture evenly on each slice
Stack two slices per sandwich or cut individual slices into quarters to form tea sandwiches
