Ingredients
15 oz pumpkin puree (canned, not pie mix)
2 cups all-purpose flour
8 oz cream cheese, softened to room temperature
3 large eggs, divided
1.5 cups granulated sugar, divided
1/2 cup vegetable oil
1 tsp baking soda
1 tbsp pumpkin pie spice
1/2 tsp salt
Instructions
Preheat oven to 350 degrees Fahrenheit and grease a loaf pan.
Whisk flour, baking soda, salt, and spices in a large bowl.
In a separate bowl, mix 1.25 cups sugar, pumpkin puree, oil, and 2 eggs until smooth.
Fold the dry ingredients into the wet ingredients until just incorporated.
In a small bowl, beat the cream cheese with the remaining 0.25 cup sugar and 1 egg until creamy.
Pour half of the pumpkin batter into the prepared loaf pan.
Spread the cream cheese mixture evenly over the pumpkin base layer.
Pour the remaining pumpkin batter on top.
Run a butter knife through the layers in a zig-zag motion to create a marble swirl.
Bake for 60 to 70 minutes until a tester comes out clean.
Cool in the pan for 15 minutes before transferring to a wire rack.
