Description

Quick strawberry rhubarb crisp is a 30-minute dessert with a sweet tart fruit filling and a golden oat topping, perfect for an easy spring or summer treat.


Ingredients

Scale

4 cups rhubarb (chopped)

3 cups strawberries (sliced)

1 1/2 cups old-fashioned oats

3/4 cup sugar

1/2 cup butter (cold)

1 tsp lemon juice

1/4 tsp salt


Instructions

1. Preheat oven to 375°F

2. Chop rhubarb and slice strawberries

3. Toss fruit with sugar and lemon juice

4. Spread mixture in a 9×13-inch baking dish

5. In a bowl, combine oats and salt

6. Cut in cold butter until crumbly

7. Add remaining sugar and mix

8. Sprinkle topping evenly over fruit

9. Bake for 30 minutes until golden and bubbling

10. Cool slightly and serve warm

Notes

Keep fruit chilled before baking

Do not overmix topping for best texture

Add cornstarch if fruit is too juicy
