Description

A protein-packed, flavorful stir fry that comes together in under 30 minutes. Lean ground turkey is browned to perfection and tossed with crisp zucchini and colorful bell peppers in a savory soy-based sauce. Perfect for busy weeknights, this Asian-fusion meal is healthy, satisfying, and easy to clean up since it uses just one skillet.

Ingredients

Scale

1 lb ground turkey
2 medium zucchini, sliced into half-moons
2 bell peppers, chopped into strips
3 cloves garlic, minced
3 tbsp soy sauce
1 tbsp sesame oil

Instructions

Slice the zucchini into half-moon shapes and chop the bell peppers into bite-sized strips.
Mince the fresh garlic cloves finely.
Heat the sesame oil in a large skillet or wok over medium-high heat.
Add the ground turkey to the pan and break it apart with a wooden spoon.
Cook the turkey until it browns completely and no pink remains.
Toss the zucchini and bell peppers into the skillet with the cooked turkey.
Pour the soy sauce over the mixture to coat everything thoroughly.
Stir-fry on high heat for 6 minutes until vegetables reach a tender-crisp texture.

Notes

Ensure vegetable slices are uniform in size for even cooking. Ground chicken can be used as a direct protein substitute. Use coconut aminos for a gluten-free version. Add fresh grated ginger for an extra aromatic kick.
