Description

This traditional rice and beans recipe combines fluffy, perfectly separated long-grain rice with tender, aromatic black beans. By sautéing a flavor base of onions, bell peppers, and fresh garlic in olive oil, this dish develops a deep, savory foundation that is both nutritious and incredibly satisfying. It is a reliable, versatile staple meal that is perfect for busy weeknights or as a foundational component for meal prepping throughout the week.

Ingredients

Scale

2 cups long-grain white rice
3 cups black beans, cooked or canned and drained
4 cups vegetable broth
1 medium yellow onion, finely diced
1 medium green bell pepper, small diced
4 garlic cloves, minced
3 tablespoons extra virgin olive oil
1 teaspoon cumin powder
1 teaspoon dried oregano
Sea salt to taste

Instructions

Rinse the rice under cold water until the water runs clear and drain well.
Heat the olive oil in a heavy-bottomed pot over medium heat.
Add the diced onions and bell peppers, sautéing until they are translucent and soft.
Stir in the minced garlic, cumin, and oregano, cooking for another minute until fragrant.
Add the drained black beans to the pot and stir to coat them in the aromatic base.
Add the rinsed rice to the pot and toast for 1-2 minutes, stirring gently.
Pour in the vegetable broth and bring the mixture to a gentle boil.
Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 20 minutes.
Remove from heat and let the pot rest, covered, for 10 minutes to allow steam to redistribute.
Fluff the rice with a fork and serve warm.

Notes

Always allow the rice to rest undisturbed after cooking to ensure the grains stay fluffy rather than gummy. For extra flavor, consider topping with fresh cilantro or a squeeze of lime juice just before serving. Store leftovers in an airtight container in the refrigerator for up to 4 days.
