3 pounds ripe Roma tomatoes, halved

6 cloves garlic, peeled

3 tablespoons extra-virgin olive oil

1 teaspoon kosher salt

1/2 teaspoon black pepper

4 fresh basil sprigs

Instructions

1. Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.

2. Arrange the tomato halves cut-side up alongside the garlic cloves on the prepared baking sheet.

3. Drizzle the olive oil evenly over the tomatoes and garlic, then season with kosher salt and black pepper.

4. Nestle the fresh basil sprigs among the tomatoes to infuse herbal warmth during the baking process.

5. Bake uncovered for 45 minutes until the tomato skins wrinkle and char slightly at the edges.

6. Blend the roasted tomato sauce homemade mixture in a food processor until smooth, then serve warm over your favorite pasta.
