Ingredients
2 lbs boneless skinless chicken breasts
16 oz chunky salsa
15 oz black beans, rinsed and drained
1 cup corn, canned or frozen
1 packet taco seasoning
4 oz cream cheese, softened to room temperature
Instructions
Place the chicken breasts in a single layer at the base of your slow cooker.
Pour the jar of chunky salsa over the meat.
Add the drained black beans and corn on top of the salsa.
Sprinkle the taco seasoning evenly over the ingredients.
Secure the lid and cook on Low for 5 hours.
Remove the lid and stir in the softened cream cheese until the sauce is smooth and combined.
Shred the chicken directly in the slow cooker using two forks until well-coated in the sauce.
Notes
Ensure the cream cheese is at room temperature to prevent clumping. You can customize the spice level by choosing different varieties of chunky salsa. Store leftovers in an airtight container in the refrigerator for up to 3 days.
