Ingredients
1.5 lbs Boneless skinless chicken breasts
1/2 cup Sun-dried tomatoes (oil-packed, drained and chopped)
4 cloves Garlic (minced finely)
3/4 cup Plain full-fat Greek yogurt
3 cups Fresh spinach (chopped)
1/2 cup Low-sodium chicken broth
Instructions
Place cleaned chicken breasts into the base of a 6-quart slow cooker.
Distribute the minced garlic and chopped sun-dried tomatoes evenly over the chicken.
Pour the chicken broth over the mixture.
Cover the slow cooker and set to low heat.
Simmer for 5 hours until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
Stir the Greek yogurt into the warm liquid at the end of the cycle.
Fold in the fresh spinach and keep covered for five minutes until the leaves wilt.
Notes
Keep the lid closed throughout the cooking process to ensure consistent heat. Always check the internal temperature of the thickest part of the chicken to ensure it is cooked through. Add the Greek yogurt slowly at the end to prevent curdling.
