Ingredients
1 1/2–2 lbs venison roast, silver skin trimmed
1 teaspoon fine salt
1/2 teaspoon black pepper, divided
1 tablespoon avocado oil
1 medium yellow onion, sliced into half-moons
4 garlic cloves, minced
1 teaspoon dried Italian seasoning
1 1/2 cups low-sodium beef broth
2 tablespoons tomato paste
1 tablespoon balsamic vinegar
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
4–5 medium carrots, cut into 2-inch chunks
2 tablespoons cornstarch (optional, for gravy)
Instructions
Pat the roast dry with paper towels and season evenly with salt and 1/4 teaspoon of the black pepper.
Heat the avocado oil in a cast iron skillet over medium-high heat and sear the roast on all sides until browned.
Place the onions and carrots in the bottom of the slow cooker and lay the seared roast on top.
In a small bowl, whisk together the beef broth, tomato paste, balsamic vinegar, Worcestershire sauce, Dijon mustard, minced garlic, Italian seasoning, and remaining black pepper.
Pour the mixture over the roast.
Cover and cook on low for 7 to 9 hours until the meat is fork-tender.
Remove the meat and vegetables to a serving platter.
If desired, whisk cornstarch with a small amount of cold water and stir into the liquid in the slow cooker; cook on high for 10-15 minutes to thicken into gravy.
Notes
Ensure you trim all silver skin as it does not break down during the cooking process and can be chewy. If the roast is very large, you can cut it into two pieces to ensure even cooking. Leftovers store well in an airtight container for up to 3 days.
