Ingredients
2 lbs Collard Greens
2 Smoked Turkey Wings
1 lb Macaroni Noodles
3 cups Sharp Cheddar, freshly shredded
12 oz Evaporated Milk
4 cups Low-sodium Chicken Stock
1 tbsp Apple cider vinegar
1 tsp Sugar
1 tsp Black pepper
Instructions
Place smoked turkey wings into a large pot with 6 cups of water and simmer for 2 hours.
Remove wings, shred the meat, and return meat to the broth.
Add washed, chopped collard greens to the turkey broth.
Season with apple cider vinegar, sugar, and black pepper, then simmer for 1 hour.
Boil macaroni noodles until al dente and drain.
Combine cooked pasta with shredded cheddar and evaporated milk, then bake until bubbly and set.
Notes
Always shred your cheddar from a block rather than using pre-shredded bags to ensure a smoother, creamier melt in the macaroni. Ensure the collard greens are washed thoroughly to remove all grit before simmering.
