Description

A slow-cooked Southern comfort dish where tender lima beans and smoky turkey meet savory aromatics in one pot. This easy recipe delivers rustic richness and velvety texture, perfect for hearty meals.

Ingredients

Scale

1 cup dried lima beans
2 smoked turkey legs or thighs
1 medium onion
2 garlic cloves
4 cups vegetable broth
1 tablespoon olive oil
Salt and black pepper to taste
12 sprigs thyme or oregano

Instructions

Rinse and soak lima beans overnight or quick-soak (boil 2 minutes, let sit 1 hour)
Sauté onion and garlic in olive oil until softened
Brown turkey thighs/legs in the same pan
Add turkey to pot, add beans, broth, and herbs
Simmer uncovered for 2 hours or until beans are buttery soft
Season to taste before serving

Notes

Rinse and drain canned beans if used (reduce broth to 2 cups)
Use low-sodium broth for better seasoning control
Shredded smoked turkey works as a shortcut
dietary note: No pork, bacon, or alcohol used
