Ingredients
Ground Chicken 1 lb (93% lean recommended)
Large Lettuce Heads 4 (iceberg or romaine)
Chili Sauce 3 tbsp
Carrots 1 medium (finely grated)
Ginger 1 tbsp (freshly grated)
Garlic 1 clove (minced)
Soy Sauce 2 tbsp (low-sodium optional)
Instructions
Cut lettuce leaves into 4-6″ cups, discarding stems
Grate carrots using fine-hole grater
Combine chili sauce, soy sauce, garlic, and ginger in a bowl
Heat olive oil in skillet over medium-high until shimmering
Break up chicken and cook for 4-5 minutes until browned
Add grated carrots and sauté for 2-3 minutes until tender
Pour sauce mixture over chicken and stir constantly
Cook for 2 minutes to fully incorporate flavors
Let mixture cool slightly while filling lettuce cups
Scrape chicken mixture into each lettuce cup using spoon
Arrange on serving platter with optional toppings
