Ingredients
1 pint strawberries, hulled and sliced
8 oz mozzarella, cut into 1/2” cubes
1/4 cup fresh basil leaves, torn
1 tbsp olive oil
1 tbsp balsamic vinegar (aged preferred)
1/2 tsp sea salt
Mixed berries (optional, as strawberry substitute)
Goat cheese (optional mozzarella substitute)
Red wine vinegar (optional balsamic substitute)
Avocado oil (optional olive oil substitute)
Instructions
Wash and hull strawberries; slice into medium-thick pieces
Cut mozzarella into 1/2″ cubes and place on parchment-lined tray
Tear basil leaves into thirds
Combine olive oil, balsamic vinegar, and sea salt in a small bowl
Arrange strawberries in alternating rows with mozzarella on a platter
Sprinkle basil between layers
Drizzle dressing evenly over the salad
Cover and refrigerate for 30 minutes, then let sit at room temperature for 15 minutes before serving
