Ingredients
2 lbs ground turkey
16 oz dry rotini or penne pasta
28 oz tomato sauce
1 medium onion, diced
3 cloves garlic, minced
1 tbsp Italian seasoning
2 cups vegetable broth
Instructions
Dice the onions and mince the garlic cloves.
Brown the ground turkey in a skillet over medium-high heat until fully cooked.
Drain any excess liquid from the skillet.
Combine cooked turkey, diced onion, and minced garlic in the crockpot.
Pour in the tomato sauce, vegetable broth, and Italian seasoning, stirring well to combine.
Add the dry, uncooked pasta to the slow cooker.
Stir again ensuring all pasta is submerged in the liquid.
Cover and slow cook on low for 4 hours until the pasta is tender.
Notes
Ensure all pasta is completely covered in the liquid before starting the slow cooker to avoid dry spots. You can add a handful of fresh spinach or topped with low-fat mozzarella cheese in the last 15 minutes for extra flavor.
