Slow-cooked to perfection, this meal ensures moist protein and perfectly cooked vegetables without the need to stand over a hot stove. It is the ultimate family-style solution for backyard picnics, reunions, or any casual get-together where you want to spend more time with guests.
Ingredients
5 lbs chicken thighs, skin removed
3 lbs Yukon Gold potatoes, cut into 2-inch chunks
2 lbs fresh green beans, trimmed
6 cloves garlic, minced
2 cups low-sodium chicken broth
3 tablespoons olive oil
1 tablespoon dried oregano
Instructions
Place the skinless chicken thighs at the base of a 6-quart slow cooker.
Layer the potato chunks on top of the chicken.
In a medium bowl, whisk together the chicken broth, olive oil, minced garlic, and dried oregano.
Pour the liquid mixture evenly over the chicken and potatoes.
Cover and cook on low for 6 hours.
Add the green beans to the slow cooker, re-cover, and cook for an additional 1 hour until the beans are tender.
Notes
Ensure chicken thighs are bone-in for superior flavor, though boneless can be used if cooking time is reduced by one hour. The potatoes should be cut uniformly to ensure they cook evenly. Leftovers store well in an airtight container in the refrigerator for up to 3 days.
