Description
Sweet miso glazed Japanese eggplant roasted until tender and coated with a savory miso glaze.
Ingredients
3 Japanese eggplants halved
1 tablespoon sesame oil
2 tablespoons white miso paste
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon honey
1 teaspoon grated ginger
1 teaspoon sesame seeds
1 tablespoon sliced green onions
Instructions
1. Preheat oven to 400°F.
2. Slice eggplants lengthwise.
3. Score the cut side lightly.
4. Brush with sesame oil.
5. Place on baking tray cut side up.
6. Mix miso soy sauce vinegar honey and ginger.
7. Spread glaze on eggplant halves.
8. Roast for 15 minutes until tender.
9. Top with sesame seeds and green onions.
Notes
Broil for 2 minutes for deeper caramelization.
Serve with steamed rice.
