Ingredients
3 large or 5 smaller ripe tomatoes, cut into chunks
2 medium avocados, stoned, pitted, and cubed
2–3 fresh limes, juice only
1/4 cup finely chopped red onion (optional substitution: shallot)
1/4 cup finely chopped cilantro (substitute with parsley if needed)
1 small chili, seeded and minced (optional)
Salt to taste (preferably Himalayan or sea salt)
Freshly ground black pepper to taste
Instructions
Wash and slice tomatoes into bite-sized chunks
Cube the avocados gently to avoid bruising
Finely chop red onion and cilantro
Prepare chili by dicing and seeding (if using)
In a mixing bowl, combine lime juice, a pinch of salt, and black pepper to make the dressing
In a large bowl, combine tomatoes, avocado cubes, chopped red onion, cilantro, and chili (if using)
Pour lime dressing over the salad and toss gently to coat
Adjust salt and pepper to taste before serving
Notes
For a milder flavor, omit the chili or reduce the amount
Chop tomatoes first to prevent browning
Serve immediately for optimal avocado texture
Store in a sealed container in the fridge for up to 2 hours
Use olive oil as a subtle base for the dressing if desired
