Description

Ingredients

Scale

12 oz pasta (fettuccine or tagliatelle)
3 tablespoons truffle oil
1 cup heavy cream or coconut cream
1/2 cup grated parmesan
1 clove garlic (optional)
Sea salt and pepper


Instructions

Boil a large pot of salted water.
Pour in the pasta and cook until al dente according to package instructions.
Reserve 1 cup of pasta water before draining the pasta.
Heat truffle oil in a large pan over medium heat.
Add garlic, if using, and sauté for 1 minute until fragrant.
Pour in the cream and stir to combine.
Simmer gently for 2 minutes to reduce slightly.
Return the drained pasta to the pot or pan with the sauce.
Stir in the grated parmesan, adding the pasta water as needed to reach a smooth consistency.
Season with salt and pepper to taste.
Serve immediately
