Description

Perfect for busy weeknights, this hearty dish delivers a complete and satisfying meal that the whole family will love, all ready in under 45 minutes.

Ingredients

Scale

1 lb Ground Beef (85/15 lean)
3 large Bell Peppers, chopped
1 cup Long-grain white rice
15 oz Tomato sauce (low-sodium)
2 cups Halal beef broth
1 medium Yellow onion, chopped
3 cloves Garlic, minced
1 tbsp Italian seasoning
Salt and black pepper to taste

Instructions

Heat a large skillet over medium-high heat.
Add the ground beef and chopped onion to the pan and cook until the meat is browned throughout.
Drain the excess fat from the skillet.
Stir in the minced garlic and cook for about one minute until fragrant.
Add the chopped bell peppers and sauté until they soften slightly.
Pour in the uncooked rice and stir to coat it in the beef juices.
Pour the tomato sauce and beef broth over the skillet mixture.
Sprinkle in the Italian seasoning, salt, and pepper and stir to combine.
Cover the skillet with a tight-fitting lid to trap the steam.
Simmer for 20 minutes on low heat until the rice is tender and the liquid is absorbed.

Notes

Cut bell peppers into uniform, bite-sized strips to ensure even softening. You can top the final dish with shredded mozzarella or cheddar cheese for added creaminess if desired. Store leftovers in an airtight container for up to 3 days.
