Description

This comforting slow-cooker meal brings the classic flavors of stuffed peppers into a hearty, easy-to-make soup. By combining lean ground turkey, colorful bell peppers, tender long-grain rice, and a savory tomato broth, you get all the satisfaction of the traditional dish without the labor-intensive assembly. Perfect for busy weeknights, this one-pot recipe develops deep, rich flavors as it simmers, making it a reliable favorite for families craving a healthy and warming home-cooked dinner.

Ingredients

Scale

1.5 lbs lean ground turkey
3 large bell peppers (mix of green, red, yellow), diced
1 medium yellow onion, finely diced
15 oz tomato sauce
28 oz diced tomatoes (undrained)
4 cups beef broth (or high-quality vegetable broth)
1 cup uncooked long-grain white rice
3 cloves garlic, minced
1 tbsp Italian seasoning
Optional: Red pepper flakes to taste

Instructions

Prepare the aromatics by dicing the onion and cleaning and chopping the bell peppers into bite-sized chunks.
In a skillet over medium-high heat, brown the ground turkey until fully cooked and crumbly; drain any excess fat if necessary.
Transfer the cooked turkey, diced onions, bell peppers, tomato sauce, diced tomatoes with their juices, beef broth, garlic, and Italian seasoning into the slow cooker basin.
Stir the ingredients well to combine.
Cover and cook on low for 6 hours or on high for 3 hours, ensuring the rice is tender and the flavors have melded.
Stir the mixture before serving to distribute the ingredients evenly.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The rice will continue to absorb liquid as it sits, so add a splash of broth when reheating if the soup is too thick. You can substitute ground chicken or lean ground beef for the turkey if preferred.
