Ingredients
Vegan Rice Paper Rounds, 8
Ripe Mango, 1 (thinly sliced)
Ripe Avocado, 1 (cubed)
Green Lettuce, 1 cup (Boston or romaine)
Fresh Mint Leaves, 10 (or Thai basil)
Carrots, 1 medium (julienned, or radishes/cucumber)
Peanut Butter or Cashew Paste, 1 tbsp (or coconut butter)
Instructions
Peel and cube avocado; blot moisture with paper towel
Peel and julienne mango
Wash and dry lettuce, mint, and carrots
Microwave peanut butter 30 seconds if solid
Submerge one rice paper round in shallow water 10-15 seconds until pliable
Transfer to parchment-lined board; layer lettuce over the bottom third
Add 3 mango slices, 3 avocado cubes, and 2 carrot ribbons
Place 3 mint leaves; repeat ingredients on top half
Spoon 1 tsp peanut butter horizontally across center of fillings
Fold bottom edge up 2 inches; bring left side halfway across
Roll tightly using a bamboo mat; place seam-side down on tray
Repeat with remaining ingredients
Notes
Soak rice paper in 84°F water for optimal pliability
Use parchment paper or plastic wrap to protect work surface
Serve with vegan chili-ginger dipping sauce if desired
Store enclosed in damp paper towels for 1-2 hours before serving to soften
